This article will not differ in many words, because the topic is not so extensive. I want to talk about only one dish – khinkal . It intrigued me.

Khinkal is boiled dough pieces, boiled meat, sauces and meat broth. All this is served at the same time. Such a non-standard and interesting dish of Caucasian cuisine.

I tried it twice. Once, the very first, – in Derbent … In the menu, I then chose the item “ thin khinkal & # 39 ;. If I googled correctly, it was Lezghin version of khinkal (or Kumyk, I didn t understand the difference).

That there are different options, I learned later, when I returned to Moscow … Then I wanted to celebrate my return and ordered the delivery of Dagestan cuisine. Only I chose another khinkal – Darginsky. Instead of thin pieces there were “ snails from unleavened, puff, spicy dough.

That s all well and good, but what intrigued me with this dish ? Namely, the fact that I do not understand how it is customary to eat. Since all the components of the dish are served separately, I was completely confused when I saw the khinkal.

I asked the waitress how I was supposed to eat. Maybe there is a special order? Do they need to throw something into the broth or do they need to drink something? In response, the girl told me that I can eat it however I want.

As a result, I threw “ khinkalins (dough) in broth, and dipped meat with sauces. I ate it all in a chaotic manner. Of course I was full. But I didn’t enjoy it. Including because I did not leave the feeling that I was doing something wrong.
